SWIFTLET'S NEST

Swiftlet's nest can be used as an ingredient in many other dishes, it can be cooked with rice to produce bird's nest congee or bird's nest boiled rice, or it can be added to egg tarts and other desserts. A bird's nest jelly can be made by placing the bird's nest in a ceramic container with minimal water and sugar (or salt) and double steamed. Ready to eat bird's nest jelly is available in jars as a commercial product.

RED DRAGON FRUIT

The flesh, which is eaten raw, is mildly sweet and low in calories. The flavour is sometimes likened to that of the kiwifruit. The fruit may be converted into juice or wine; the flowers can be eaten or steeped as tea. Sesame seed-sized seeds are embedded throughout the flesh. Although the tiny pitaya seeds are eaten with the flesh, the seeds are indigestible. The red flesh variety is believed to be rich in antioxidants and and has a an exceptionally high content of soluble fiber. It is considered a good source of vitamin C.

WHITE DRAGON FRUIT

This fruit is also known as the "red pitaya". But do not be confused with the word "red" as it is refering to the red skin and not the flesh. At times, it may mislead you to think it is the other red-fleshed species. There are also various cultivars of dragon fruit and since they do look alike to a layman, I will just put them under their colour classifications.

AFRICA CATFISH

Known as sharptooth catfish in aquaculture, a highly recommended food fish in Africa. Marketed fresh and frozen; eaten broiled, fried and baked.

KING OF FRUIT

Known as the "King of Fruit," the durian is a tropical fruit rarely seen outside of Southeast Asia. The durian, named for an Indonesian word meaning "thorny," resembles an unripe coconut with spines covering its thick, green rind. Infamous for its strangely foul smell, the flesh of this fruit is nonetheless sweet and delicious.
